Ingredients
- 1lb Ground Beef
- ¼ Cup Chopped Onion
- ¼ Cup Uncooked Minute Rice
- ¼ Cup Cracker Crumbs
- 1/3 Cup Milk
- 1 ¼ tsp Salt
- ¼ tsp Ground Pepper
- ¼ tsp Poultry Seasoning
- 2 tbsp Olive Oil
- 10 oz can Cream of Celery
- 1 Cup Water
- Chopped parsley, optional
Directions (Steps, Oven Temperature, Time per Step)
- Preheat fry pan to medium-high heat then add olive oil
- In a large bowl, mix the beef, onion, rice, cracker crumbs, milk, salt, pepper, and poultry seasoning together
- Shape into medium-sized balls then place in fry pan. Brown all sides
- Add soup, then dilute with water
- Cover and let simmer for 1 ¼ hour, stirring occasionally
- Sprinkle with chopped parsley (optional)

This entrée goes well with mashed potatoes and steamed broccoli
Recipe’s Story: Anecdote (Three to Five Sentences)
This recipe was created by my mother and is by far my favorite comfort food. I would get so excited when mom would say that she was making it for dinner. I would always ask for the same sides – mashed potatoes and steamed broccoli. It never got old.
