Thrifty Meatballs

Ingredients:

  • 1lb Ground Beef
  • ¼ Cup Chopped Onion
  • ¼ Cup Uncooked Minute Rice
  • ¼ Cup Cracker Crumbs
  • 1/3 Cup Milk
  • 1 ¼ tsp Salt
  • ¼ tsp Ground Pepper
  • ¼ tsp Poultry Seasoning
  • 2 tbsp Olive Oil
  • 10 oz can Cream of Celery
  • 1 Cup Water
  • Chopped parsley, optional

Directions:

  1. Preheat fry pan to medium-high heat then add olive oil
  2. In a large bowl, mix the beef, onion, rice, cracker crumbs, milk, salt, pepper, and poultry seasoning together
  3. Shape into medium-sized balls then place in fry pan. Brown all sides
  4. Add soup, then dilute with water
  5. Cover and let simmer for 1 ¼ hour, stirring occasionally
  6. Sprinkle with chopped parsley (optional)

Suggested Pairings:

This entrée goes well with mashed potatoes and steamed broccoli

Recipe's Story:

This recipe was created by my mother and is by far my favorite comfort food. I would get so excited when mom would say that she was making it for dinner. I would always ask for the same sides – mashed potatoes and steamed broccoli. It never got old.
