Spinach and Broccoli Quiche

Ingredients:
- 3 tbsp butter, divided, plus more to grease pie dish
- 1 homemade or refrigerated pie crust (we prefer Pillsbury but any brand will work)
- 4 eggs
- 1 cup Half & Half
- 1 white onion, sliced
- 2 cups broccoli, fresh or frozen
- 2 cups fresh spinach, washed, dried and de-stemmed
- 1 or 2 cloves garlic, minced
- 1 to 2 cups of cheese, shredded, plus more for garnish (we prefer a blend of fresh-shaved Asiago and Parmesan, but we usually just use the bagged Italian Blend and it works fine)
- 1/2 cup green onion, chopped – optional for garnish
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp red pepper flake
- Pinch nutmeg
Salt and Pepper
Directions:
- Preheat oven to 350 degrees. Melt 1 tbsp butter and set aside to cool
- Butter a 9″ glass pie dish. If using homemade crust, partially bake for 5-10 minutes. Or bring pre-made crust to room temperature then spread evenly across the dish and crimp the edges.
- For the filling: Melt 2 tbsp butter in a skillet on Medium-High heat. Add onions and cook until slightly softened, 2-3 minutes. Add broccoli and season well with garlic powder, onion powder, red pepper flake, salt and pepper to taste. Continue cooking until onion is translucent and broccoli is cooked through, 3-4 minutes (they will continue to cook in the oven). Add garlic and sauté 1 more minute, then turn off heat. Tear spinach and spread across top of pan, season with salt & pepper and stir into the mixture until slightly wilted, 1-2 minutes (this will also continue to cook in the oven).
- Add mixture to the crust and cover with cheese. (If mixture is still hot, allow to cool a little to prevent melting the cheese and cooking the eggs in the next step.)
- In a separate bowl use a whisk or fork to beat the eggs, adding the melted butter and half & Season with salt, pepper and a pinch of nutmeg. Mix well and pour into crust, fully covering other ingredients. Crack some fresh black pepper over top, if available.
- Bake for 40-50 minutes or until a knife in the middle comes out clean. If the crust starts to brown before the center is set, cover loosely with aluminum foil.
- Slice and serve with more shaved cheese and green onion on top, if desired.

Around the beginning of Quarantine, Austin and I wanted to make sure our weekends felt “special” and different from every other day spent at home. So we started experimenting with brunch recipes and determined this to be the perfect quiche! We like to drink our coffee while putting this together, then spend the afternoon drinking mimosas and playing board games while enjoying this delicious brunch.
