Black Bean Sweet Potato Enchiladas

Ingredients:
- 2 tbsp Butter
- 2 tbsp Flour
- 1 cup milk
- 2 cups macaroni noodles or shells
- 3 oz of 3 different cheeses (Sharp Cheddar, Fontina, Monterey Jack are recommended)
- Salt and pepper, to taste
- Optional: cooked vegetables and meats
Directions:
- Preheat oven to 350 degrees
- Cook 2 cups of macaroni noodles or shells
- Melt 2 tbsp butter in pan
- Whisk in 2 tbsp flour
- Warm then gradually whisk in 1 cup milk
- Add cheese to pan and stir until melted
- Mix cheese and noodles in baking pan.
- Mix in other vegetables or meats, if desired
- Bake in oven for 30 minutes
Suggested Pairings:
Add cooked broccoli, peas, sausage, or ham to taste!
