Greek Quinoa & Feta Salad

Ingredients:
- 1 English Cucumber, quartered
- 1 Garlic Clove, minced
- 1/4 Red Onion, diced
- 2 cups Cherry Tomatoes, halved
- 1 cup Quinoa, dry
- 2 cups Chicken Broth
- ½ cup Feta Cheese Crumbles
- 1/3 cup Olive Oil
- 2-3 tsp Lemon Juice
- 3 tbsp Red Wine Vinegar
- pinch of Salt and Pepper
Directions:
- Put quinoa and water/broth in saucepan and bring to a boil. Reduce to simmer for 15 minutes.
- Take quinoa off heat and allow to cool.
- Add quinoa to a large bowl with cherry tomatoes, cucumber, onion, and feta cheese.
- In a small bowl, mix the salt, pepper, lemon juice, olive oil, and red wine vinegar.
- Pour dressing over quinoa mixture, mix and serve
Recipe's Story:
This is a wonderful, light salad that doubles as a full meal. I stumbled across this recipe a while back, and I can honestly say I could have it every week and not get sick of it. I was looking for something healthy and tasty and this fits the bill. I plan to keep this recipe in the family for years to come.
