Recipe Type - Appetizer
Serving(s) - 10-12
Cook Time - N/A
Prep Time - 20 mins
Ingredients:
- 8 oz extra sharp cheddar cheese (not pre-shredded)
- 8 oz mild cheddar cheese (not pre-shredded)
- 2 oz bleu cheese crumbles
- 8 oz cream cheese, softened
- ½ cup mayonnaise
- 1 tsp grated garlic, or to taste
- Crackers, for serving (woven wheat and butter crackers are recommended)
- 1-2 cheese knives, for serving
Directions:
- Shred the blocks of sharp and extra sharp cheese (easiest to shred when cold)
- Mix all ingredients together in a large bowl (It’s best to use your hands to “squeeze” the ingredients together – this ensures the cream cheese gets thoroughly incorporated)
- Scoop mixture into serving dish (decorative medium size bowl, covered or Tupperware container)
- Dish tastes best if left in fridge overnight and then removed before serving to sit on counter until it reaches room temperature (1-2 hours)
Suggested Pairings:
Bold red wine or day-after-Christmas TV marathon.
Recipe's Story:
My Grandma Agnes Frye made this recipe every Christmas for the Frye Family Christmas celebration, a tradition that has carried on every year since her passing. Since she has 9 kids and 40+ grandkids and great grandkids that typically attend this celebration, we usually double or triple the recipe. One year this was literally all I ate at the party – it’s THAT good! This is one dish that gets tastier with time, so leftovers, albeit rare, are a delicacy. Me and my sister managed to snag the leftovers one year and finished it off the next morning with a bottle of cabernet and a Lost TV show marathon. 10/10 recommend (the food and the show).
