Chocolate Bites

Cook Time - 11-20 minutes per sheet
Prep Time - 20 minutes plus 1 hour chill time

Ingredients:
- 2 cups (12 oz) semisweet chocolate chips (divided)
- 1 cup unsalted butter
- 5 Tbsp confectioners sugar
- 1 tsp vanilla extract
- 2 cups flour
- 1 c pecans – finely chopped
Directions:
- Melt ¾ cup chocolate chips in double boiler. Cool 10 minutes.
- Mix butter and sugar until creamy.
- Beat in cooled chocolate and vanilla with wooden spoon.
- Stir in flour, remaining chocolate chips and pecans.
- Cover and refrigerate for 1 hour.
- Preheat oven to 350 degrees.
- Roll dough into 1 ¼ in balls (or smaller) and place on ungreased sheets. Bake 11-15 minutes.
- Roll in powdered sugar.
Recipe's Story:
This is one of approximately 25 Christmas cookies that my family bakes every year. The cookie exchange tradition was started by my grandmother who was an excellent baker. My mother has continued the tradition and I am now responsible for certain recipes as well (my nemesis – the spritz!)
